The tradition of Italian pasta

A project born to tell the story of Italy through its cuisine.

Top-down view of handmade pasta, tools, and recipe papers on a sunlit wooden table.
An elegant wooden pasta board dusted with fine white flour, displaying perfectly aligned fresh tagliatelle nests in a warm egg-yellow hue, each strand slightly irregular and clearly hand-cut. The board rests on a pale stone countertop in a refined Bolognese cucina, with copper pots softly blurred in the background. Late afternoon natural light enters from the left, casting gentle, elongated shadows and subtle highlights on the silky pasta surface. Photographed at a slightly elevated angle with shallow depth of field, emphasizing the texture of the dough and flour. The atmosphere is sophisticated yet comforting, with photographic realism and a clean, minimalist composition that evokes authentic Italian culinary tradition.

Our story

Italian cuisine is made of simple ingredients, handed-down gestures, and moments shared around a table.

Our project stems from experience in the gastronomic activities sector for tourists and the desire to share one of our country's most beloved traditions: handmade pasta.

We believe the best way to get to know a culture is to live it.

For this reason, we organize courses that allow you to truly enter the Italian culinary tradition.

Our mission

We want to offer authentic, simple, and accessible experiences for everyone. During our courses, you will be able to:

  • learn traditional techniques
  • to know the Italian gastronomic culture
  • share a convivial moment around the table.

Masters of pasta

A refined still life of freshly shaped tortelloni arranged in a gentle spiral on a cool, veined marble slab, each piece meticulously folded with visible pinched edges and plump centers hinting at the ricotta filling inside. The tortelloni have a rich, eggy color and a faint dusting of semolina. In the background, out of focus, rests an antique wooden pasta board and a small porcelain bowl filled with flour. Soft morning window light bathes the scene from the right, creating delicate highlights and graceful shadows. Photographed from a slightly elevated angle with careful rule-of-thirds composition and shallow depth of field, the image captures a sophisticated, poetic, photographic realism that celebrates Bolognese pasta tradition.

A team of local experts

We collaborate with chefs and cooking instructors who have a deep knowledge of regional traditions.

Each course is led by passionate professionals who make the experience engaging and authentic.

A sophisticated composition featuring a stack of classic Italian recipe notebooks and a neatly folded linen apron resting beside a wooden pasta board sprinkled with flour and a small pile of freshly rolled tagliatelle. A slender metal ruler and precise pasta cutter lie parallel, suggesting measured instruction and meticulous technique. The setting is a calm, high-end teaching kitchen with muted cream walls and discreet shelving blurred in the background. Soft, diffused overcast light from a large window creates an even, gentle illumination with minimal shadows, enhancing surface textures without harsh contrast. Shot from an oblique, slightly elevated angle with moderate depth of field, the photograph conveys a scholarly, atelier-like atmosphere, blending artisanal craft and sophistication to represent structured pasta-making courses in Bologna.

Our cities

The project was born in Bologna, the capital of fresh pasta.

We will soon be bringing our courses to Rome as well,
Rimini and Riccione, to showcase the diverse traditions of Italian cuisine.
